Instructions:
  1. Preheat your oven to 350°F. Line baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, cream together the butter, sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs and vanilla until well combined.
  4. Gradually add the flour, baking soda, and salt, mixing until just incorporated.
  5. Gently fold in the diced apples.
  6. In a separate bowl, mix together the butter, brown sugar, sugar, cinnamon, flour, and rolled oats until crumbly.
  7. Scoop the cookie dough onto the prepared baking sheets, spacing them about about 2 inches apart.
  8. Sprinkle a generous amount of the crumble topping over each cookie, gently pressing it into the dough.
  9. Bake in the preheated oven for 12-14 minutes, or until the cookies are golden brown around the edges and set in the center.
  10. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  11. Drizzle the honey glaze over the cooled cookies for an extra touch of sweetness once they have cooled completely.
