Instructions:

Making the Marinade

  • Blend the peeled Granny Smith apple until smooth
  • In a bowl, whisk together the apple puree, gochujang, gochugaru, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger.

Marinate the Pork

  • Coat the pork chops in the marinade and let sit for at least 30 minutes (or overnight for deeper flavor)

Cook the Pork

  • Heat a cast-iron skillet or grill pan over medium-high heat with a bit of neutral oil
  • Sear the pork for 3-4 minutes per side until caramelized and cooked through
  • Rest for a few minutes, then slice thinly
  • Garnish with sesame seeds and scallions
