Instructions:
  1. Slice Granny Smith apple into thin sticks.
  2. Slice the cucumber into thin sticks as well.
  3. Cook the rice noodles according to the package instructions, rinse and place in a large bowl. Once cool, combine the apple and cucumber.
  4. Make the dressing- blitz all ingredients, except the poppyseeds, in a blender or with an immersion blender. Stir in the poppyseeds.
  5. Pour the dressing over the noodles, apple, and cucumber. Toss to mix. Add the fresh herbs, gently toss again.
  6. Top with toasted walnuts.
