Instructions:
- Slice Granny Smith apple into thin sticks.
- Slice the cucumber into thin sticks as well.
- Cook the rice noodles according to the package instructions, rinse and place in a large bowl. Once cool, combine the apple and cucumber.
- Make the dressing- blitz all ingredients, except the poppyseeds, in a blender or with an immersion blender. Stir in the poppyseeds.
- Pour the dressing over the noodles, apple, and cucumber. Toss to mix. Add the fresh herbs, gently toss again.
- Top with toasted walnuts.
