Instructions:
Apple Pie Filling
- Add all ingredients to a pot and stir to combine.
 - Bring to a boil, stir well, reduce heat to medium-low and simmer for 20-25 minutes or until the apples are slightly soft and the sauce is thick. Stir regularly as it cooks.
 - Allow it to cool before laying.
 
Caramel Sauce
- Add ingredients to a pot and whisk to combine.
 - Bring the mixture to a boil and then reduce heat to medium-low and simmer for 40-50 minutes or until it reduces by half and is thick.
 - Allow it to cool in the fridge where it will thicken.
 
Granola
- Add the oats, coconut and nuts to a food processor and pulse briefly to coarsely grind.
 - Add the maple syrup and pulse to combine.
 - Spread the mixture onto a parchment paper lined tray. Bake at 350°F for 17-25 minutes until golden brown. Allow to cool. It will crisp up.
 
Assembly
1 batch Apple Pie Filling
1 cup Yogurt of choice
1 batch Granola
1 batch Caramel Sauce
- Spoon some yogurt into a glass. Top with the apple pie filling. Sprinkle granola on top. Repeat the layers.
 - Drizzle caramel sauce on top.
 - Repeat to fill 3-4 glasses.
 - Eat immediately.
